Use Hung Curd
Hung curd gives a thick, creamy base for marinades. It helps the spices stick and gives dishes a smooth texture.
Use Mustard Oil
A small amount of mustard oil adds depth and authentic tandoori aroma. It also enhances colour and flavour.
Add Kashmiri Red Chilli
This gives a bright red colour without adding too much heat. It is one of the core ingredients of tandoori dishes.
Preheat the Oven on High
